Bourbon Barrel Aged Imperial Stout – 13.5%% ABV

While we were on the hunt for our single anniversary barrel, we also found a blend of Imperial Stout aging for 32 months in 12yr Elijah Craig barrels that we were really digging, dubbed “When Doves Cry.” We racked those barrels out and aged them on a melange of Comoros Vanilla Beans, Cured Mexican Vanilla Beans, and Madagascar Vanilla Beans. We couldn’t decide on one varietal of bean to best compliment the base blend, so we just said “fuck it” and went with all three at triple the typical dosage rate for us!
The result is an absolutely pummeling wall of Vanilla and Fudge, smooth Bourbon character, rich and chewy Oaky vanillins, and something akin to a Bourbon Vanilla Float. Big, thiccc, rich, and vanilla AF. So much Vanilla, it’ll make a dove cry.
