Fresh off the heels of our last Fruited DDH DIPA, we learned quite a bit about the process of incorporating fruit into the mix and our Cellar Manager Jorge has been begging to do a Pineapple IPA for a while, so here we are! HUZZAH! “SOUL SEEKER” is here to help you find that little slice of hoppy-fruity-zen you’ve been hunting for!

You remember those “I Spy” books from way back in the day? Those were sick as hell, right? As an adult, I cannot fathom how much of a pain it must have been to make those set pieces, but I assume it’s about as hard as trying to find all the little things to tweak to hone the process of making high-quality Fruited DDH DIPA. Right? Everyone can relate to this exact example here? Just us? Okay, whatever. We wanted to select a hop blend to be utilized at the specific points in the process that would maximize “Tropical / Pineapple” characteristics this time around, and we are SUPER happy with the results. Just like the last one, but WAY more tropical. This thing is INTENSE, and once again, we really relied most heavily on the hops, using the fruit as simply a base foundation.

Mashed with a base of 100% @Riverbendmalt, comprised of Chesapeake Pilsner, Oats, Wheat, and Chit Malt to give an amped up and luscious body, hopped on the hot side with BRU-1 and hot-dipped in the Fermenter with El Dorado Dynaboost, and then fermented with our House Hazy IPA yeast. Dry-hopped the first time around with a heavy dose of Ella and a whole mess of Pineapple, spunded for natural carbonation, and then double-dry-hopped with Vic Secret, Citra Hop Kief, and Pineapple Terpenes.

Notes of a hollowed-out Pineapple mug overflowing with DIPA, a fresh lil’ Pineapple Upside-down Cake with a dollop of Whipped Cream, a bit of underlying dankness that immediately morphs into SUPER bright fruit leather, the feeling when you crack into a fresh bag of Pineapple Hi-Chew candies, and some pretty cool Tropical-Hop-Tsunami vibes. It’s both INCREDIBLY fruit-forward and INCREDIBLY hoppy. This makes us VERY happy to hit the nail on the head so firmly once again. Big ups to Jorge for taking what we learned in the cellar on the last one and insisting we take another crack at it!
