A few years ago, we teamed up with our buds @8thstatebrewing to bring you an Oat IPA absolutely smothered with hops, titled “Phantom Tiptoe”. After a few years of different riffs on that beer, we decided it was time to tap back into the original collaborators, loop in our buds @eggersfarms for that Southern Hemisphere selection, and overhaul the whole dang thing. And thus, we are pleased as punch to bring you our newest 8th State Collab “Phantom Colosseum”!

Mashed with a base of @Riverbendmalt Cumberland Pils, and then absolutely pummeled with a staggering amount of Flaked Oats, as well as a blend of Malted Oats from Riverbend and @proximitymalt. Hopped in the Whirlpool with Vic Secret for a base layer of Pineapple-tropical notes, and fermented with our House Juicy IPA Yeast before being spunded for natural carbonation. Dry hopped initially with Ekuanot for more juicy-tropical-Pineapple vibes, then dry hopped a second time with a punishing amount of more Vic Secret and Ekuanot, alongside some extra choice @eggersfarms Motueka and Riwaka CGX.

We experience tidal wave after tidal wave of tropical-Pineapple-Mango daydreams, a super fluffy-Oaty-tooty-fruity body, extra bright and drippy Lime-Mango slushies, a few hints of underlying dankness balanced by high-beams-on levels of fruit juice, and maximum Southern Hemisphere raditude. 

We’re super excited to breathe some life back into this base Oat IPA recipe with the help of our buds, and even more excited that 8th State came back to the table this time around. The Phantom series has been a blast for us, and this is really a big step forward in the evolution of this series. Brat Summer may be over, but the Phantom is here to rip it up.
