So you thought Billy won a Grammy and we were just gonna celebrate with ONE beer?! NO WAY, NO WAY, NO WAY!
“Creek Water” is a new WCIPA whipped up to provide a little yin to the yang of our Billy Lager, “A Little Catch & Release”, cuz who doesn’t need a little IPA after a few Lagers (and vice versa)? We also wanted to continue our love affair with more classic Hops and showcase a late-harvest hop from our buds @crosbyhopfarms, Deep Cut Cascade, that is essentially Cascade with the volume turned ALL the way up.
Mashed with our typical base of @Riverbend Chesapeake Pilsner, Czech Pilsner, and Chit Malt, along with a small percentage of Flaked Rice to really dry out the body and allow the hops to shine. We hit it HARD on the hot side with Columbus in the boil and then Columbus AND Deep Cut Cascade in the Whirlpool, as well as a hefty Hot Dip of Chinook Incognito in the Fermenter. Fermented low and slow and spunded for dat natural carb. Dry hopped once, but rather aggressively with Deep Cut Cascade AND Deep Cut Cascade CGX for some extra saturation.
Similar to sipping on a glass of acid-adjusted Orange Juice, a subtle amount of sticky-sappy resinous citrus salad, jamming that crazy jagged spoon into a juicy Grapefruit without the extra bitterness, the dankness of a lot party before a show, and that first righteous pint of Sierra Nevada Pale Ale you had from way back when (without the Caramel Malts). Wow. Seriously, this lot of Cascade is incredible.
This is clear, it is bright, it is very citrusy, it is a beautiful Yellow hue, it is bitter, it is dry, and it is resinous. Hell yeah. Shred that gnar gnar. Celebrate the GRAMMY WINNING GOAT HIMSELF: Billy!
