Cosmic Bouquet – Triple Dry-Hopped Double India Pale Ale

Hark! A new TDH DIPA is here! “Cosmic Bouquet” is an exercise in highlighting a new-to-us Hop, Celeste, by pairing it with hops that would complement its oil composition as best we could. Very thankful to @nyhopguild for the hop suggestion! We tried really hard to build a base foundation of hops that would really elevate Celeste as best we could!

This TDH Hazy DIPA is packed to the gills with more Hops than you can shake a cosmic bird’s feathers at. Mashed with @Riverbend Cumberland Pils, then fluffed up to the heavens with Riverbend Oat Malt, Appalachian Wheat, and Flaked Oats. We hit it in the Whirlpool with Strata, and El Dorado Lupomax, then threw it on top of a Hot Dip in the FV with El Dorado Incognito. Fermented with our House Hazy IPA yeast, dry-hopped first with a very large charge of Celeste, spunded for 100% natural carbonation, and then double-dry-hopped with an obnoxious volume of more Celeste and more El Dorado Lupomax, THEN triple-dry-hopped with a very heavy dose of Citra Liquid Lupulin in the Brite for good measure.

An exceedingly fluffy body, it’s giving White Gummy bears and Bosch Pears floating in a glass of Sauvignon Blanc, some nice wedges of Bittermelon, Passionfruit smoothies in a bed of Pine Needles, some uber-dank and resinous sticky-icky without that “DAMN THAT’S SOME GAS” stank to it, very specifically Watermelon Jolly Ranchers if they were also definitely edibles, and an exceedingly pleasant balance of bitterness and fruity-sweetness that we’ve truly been striving for with these Hoppy Ales lately. Celeste is a certified banger of a Hop, no doubt about it. BIG BIG UPS to @nyhopguild for the hookup with Celeste hops!
