Graf Blended Berliner Weisse (Collab w/ Bhramari) – 5.7% ABV

During the pandemic, we were talking with Gary of Bhramari Brewing about doing a collab, but we couldn’t find anything that really tickled our fancy. So we set about tasting through each other’s Mixed Culture stock and finding some fun blends. For our release, we landed on a Blended Mixed Culture Graf-style Berliner Weisse, “Bone Apple Teeth”, landing at an approachable 5.7% ABV.
The base is a 100% Riverbend Malt based Foeder-fermented Berliner Weisse that was right around a year old and wholly fermented with our House Culture. We then blended in a mature, all-NC Apple, Foeder Fermented Mixed Culture Cider that was fermented with native yeast as well as our House Culture. To top it off, we blended in just a very small touch of a Puncheon-fermented Mixed Culture Hefe (unreleased Collab alert!) for complexity and depth. As is our process with these Mixed Culture beverages, we bottle conditioned this blend for many months with our House Culture and a dose of Walker Honey Farms Wildflower Honey.
The resulting beer is a Mixed Culture Graf, or a Traditional Berliner with Cider as the fruit component. It is a super fun departure from what we have released thus far in our Mixed Culture program and is a bit telling of where we’re headed with the Berliner series of these beers.
