Please welcome “Billion Budgie Death Stare” to the stage, y’all.
Brewed with a base of Riverbend Malt Pilsner and just a touch of Melanoidin malt for extra depth, hopped very aggressively with Hallertauer Mittelfruh, Saphir, and Saaz on the hot side, fermented low and slow with our House Lager yeast, and spunded for 100% natural carbonation…but, then we changed things up a bit. We dry-hopped this cold (at Lager temps) with Perle and Saaz for a really fun, subtle, and nuanced layer of complexity. This is our first foray into this style and we’re friggin’ jazzed. This is truly one spicy meatball.
We get notes of fresh loaves of white bread and soup crackers, laid on top of a fine bed of Clementine and Peach Bellinis, a slight floral breeze, someone shouting “BELLISIMO, BELLA!” from a distance, and just a chef’s kiss of crystalline resin (that’s Brewer Ben’s tasting note and we love it). Obviously, this also packs our classic Lager character that we strive so hard to maintain: that Chippy-Boi™ bite, minerality, and dry finish…but with a really fun twist. You already know.
PLEASE NOTE: “Italian-style Pilsner” just means more hop-forward and slightly softer than your typical Pilsner, and decidedly dry-hopped. This tastes nothing like meatballs, contains no meat, and is not spicy. Spicy meatball is a figure of speech.
