“Ancient Teeth” is a Single-Barrel Bourbon Barrel-Aged Barleywine, made in collaboration with the Southern Grist crew. After 26 months in an 18yr Elijah Craig barrel, we decided it was time to bring this beast into the light. And we hope ya dig it!
A few years back (OMG, was it 5 years ago?!), the wonderful humans of Southern Grist invited us to brew up a few collabs with them before we officially opened our doors. Then they barrel-aged some of those beers, and they turned into “Wooden Teeth”, a Bourbon Barrel Barleywine. We thought it turned out awesome, and they got a few wild accolades for it. IDK, man, those cats kill the game and that’s no surprise. We were just honored to have been there for the brewday to smile and take a few pics and eat Nasheville Hot Chicken that was so hot Vince almost passed out.
WELL, we decided to attempt to pay homage to that beer and brew it on our own system a few years ago, but without any Hot Chicken. AND THUS, “Ancient Teeth” was born! Mashed with a blend of Riverbend Malt and some select English Malts, boiled for an arguably long time, hopped lightly in the kettle and then fermented with our House Pub Ale yeast before being racked into barrels.
After tasting through the barrels, we found the most pronounced one, and decided this needed no adjuncts whatsoever. And so, here we are!
We experience a bright and overwhelming Bourbon character, deep dark notes of Molasses and Brown Bread, a wave of Oak-Vanilla tannins, probably a few Fig Newtons and Tootsie Pops, and a boozy-fruity finish you’d expect from one of our Barleywines.
