Our newest TDH DIPA is here! “Mortal Composure” is a collab with our buds Savage Craft Brewing. When we got the invite to Wild Hartsville (THIS WEEKEND! COME HANG!), we thought it would be pretty rad to work with Savage Craft to maximize the SC fun! We wanted to smash up two recipes of ours, so we went with “Reapers and Creepers” from us and “Moonz Out, Goonz Out” from Savage Craft!
This lil’ ditty is a TDH Hazy DIPA, packed to the gills with more Hops than most mere mortals can handle. Mashed with a blend of @Riverbend Cumberland Pils and Czech Pils for the most pale base we could muster, then fluffed up to the heavens with Riverbend Oat Malt and Flaked Oats. We hit it in the Whirlpool with some extra dank Egger’s Riwaka AND Nelson Sauvin Cryo, on top of a Hot Dip in the FV with Citra Prysma. Fermented with our House Hazy IPA yeast, dry-hopped first with a very large charge of Nectaron and Strata, spunded for 100% natural carbonation, and then double-dry-hopped with a god-fearing and thunderous volume of more Nectaron and Strata, along with a very fat charge of Enigma, THEN triple-dry-hopped with a very heavy dose of Motueka Amplifire Oil in the Brite for that extra heavy grape-meets-citrus good-good dank-dank top note.
This process of breathing new life into a hybrid of hop bills in a collaboration is so exciting BECAUSE of the complexity, and the changes we make always just push both parties forward while trying to pay homage to the base beers. Plus the Savage Craft crew was SO SO kind and thoughtful, came out to spend the brew day with us, and we’re just so happy it came out this well!
A super fluffy body, bursting with notes of fuzzy and sweet Peach wedges, mountains of Tangelo zest, a handful of those little lime sugar wedge and Mike and Ikes, Cab Sauv grape must, and just a smidge of that sweet stinky stanky danky to tie the room together.
