Everyone’s favorite Southern Hemisphere DDH IPA…BUT WAIT! WHAT’S THIS?! IT CAME BACK AS A 8.2% ABV TDH DIPA, TURNED ALLLLLLL THE WAY UP?!?!, “Magic DOOM Mountain” is here for all your flavor-exploratory and heavy metal mountaineering needs! As it has been with some of our latest hoppy releases, we wanted to look back on a tried-and-true favorite (Magic Cloud Mountain) and apply some of the new Hoppy-Ale procedures we’ve adopted.
This lil’ ditty is a TDH Hazy DIPA, packed to the gills with more Hops than you can shake your tailbone at. Mashed with a blend of @Riverbend Cumberland Pils and Czech Pils for the most pale base we could muster, then fluffed up to the heavens with Riverbend Oat Malt and Flaked Oats. We hit it in the Whirlpool with some extra dank Nectaron AND Citra Cryo, on top of a Hot Dip in the FV with Chinook Dynaboost. Fermented with our House Hazy IPA yeast, dry-hopped first with a very large charge of Nectaron and Superdelic, spunded for 100% natural carbonation, and then double-dry-hopped with a rip-roaring and mountainous volume of more Nectaron and Superdelic, along with a very fat charge of Nelson Sauvin Cryo, THEN triple-dry-hopped with a very heavy dose of Kohia Nelson Sauvin Liquid Lupulin in the Brite for that extra heavy grape-meets-citrus good-good dank-dank top note.
As always, we made a few small changes on the original hop combo, but kept the core blend very close to the same (Nectaron & Superdelic), just amped WAY, WAY up. Same target for hop expression, but once again cranked way up in body, aroma, mouthfeel, and total hop saturation. In case anyone cares, this process of breathing new life into favorite brands of ours is so exciting BECAUSE of the complexity, and the changes we make always just push the brand forward while staying the same. Super duper fun from a production standpoint, and it’s always fun to keep these TDH DIPAs rooted in Dank and Fruity, so this one was no exception.
A super silky body, bursting with notes of Haribo gummies drowning in a river of Guava and Berries, some magical lil Cutie Tangerines in the Summer, the classic brightness of fruit and depth of miscellaneous tropical fruit character we all know and love from NZ/AU hops, and just a smidge of that CBD legal-weed dankness to tie the room together.
