“CRYOSLEEP” is a Bourbon-Barrel Aged Doppelbock and we’re so excited that it feels like something is about to burst out of our chests!
In August of last year, we teamed up with the righteous homies @outsiderbrewing and @riverbendmalt to celebrate Craft Malt Month by brewing up a big ol’ 100% Riverbend Malt Doppelbock. A complex blend of Malts including Cumberland Pilsner, Munich and Chit, with just the faintest kisses of Munich Rye, Crystal Malt, and Maple=Smoked Pilsner to round it all out. Boiled for MANY hours and slathered with Huell Melon hops on the hot side for extra depth. We then fermented this cold with our House Lager strain, Lagered it for a few weeks, and then laid it down to rest in a slew of Bourbon Barrels courtesy of the Bull City Bourbon Club! Like that hit franchise Alien, we sent these things off to Cryosleep for a planned one-year journey! We may or may not have missed Craft Malt Month by a few days this year, but that’s okay!
After exactly 12 months of aging time, we culled the barrels straight out of their long slumber and went with a blend of 3 barrels: 5-year Heaven’s Door Whiskey, 5-year Rabbit Hole Whiskey, and 9-year George Dickel. Thankfully they didn’t have Xenomorphs explode out of them and interrupt their long slumber, amiright?!
Complex notes of dried Plums and Raisins wrapped in Tobacco Leaf and dipped in Bourbon, some Brown Bread with a Melon jam lightly basted on there, a deep and everlasting Malty mid-palate that just dances between dangerously quaffable and “Oh, shit, this is a big’un” while never veering too far into thick-chocolate Stout-ville, some of that classic smoky Rye Whiskey kick we all know and love, and some absolutely beautiful Vanilla Oaky tannins that really do tie the whole room together.
