“Cosmic Cradle” is a new Fresh Hop WCIPA conjured up as a tribute to the timely fresh-hop Centennial-focused American IPA made by a famous brewery out of Chico and Asheville that gets a lot of CELEBRATING. Okay, do you get the subtle reference?
Mashed with our typical base of @Riverbend Chesapeake Pilsner, Czech Pilsner, and Chit Malt, along with a smaller percentage of Double Roasted Crystal Malt to add some mid-palate Malt complexity and compliment the sticky-dankness we all know and love in a WCIPA. We did this recently on “Found Footage” and that success in approach is what inspired us to make this beer!
We figured the OG recipe was slathered in Centennial, so we hit it HARD on the hot side with Columbus in the boil and Centennial AND Centennial NUVO CGX Fresh Hop pellets in the Whirlpool, as well as a hefty Hot Dip of Chinook Incognito in the Fermenter. Fermented low and slow and spunded for dat natural carb. Dry hopped once, but rather aggressively with Cascade, Columbus, even more Centennial NUVO CGX Fresh Hop pellets, and a fat dab of Columbus Cryo.
Similar to literally biting into a torpedo of Citrus, a sticky-icky amount of coniferous flora steeped in a pool of zest, fresh Clementine wedges dipped in a light Caramel, the dankness of a freshly-mown field, and that first righteous pint of Celebration you had from way back when.
Damn. Seriously, this really fuckin rips. Toeing the line deftly between old-school and new-school WCIPA, we honestly think we did the GOAT justice. We hope you can celebrate this one as much as we do!
This is clear, it is SLIGHTLY Malt-forward, it is very citrusy, it is a beautiful Orange hue, it is bitter, it is dry, and it is resinous Hell yeah. Shred that gnar gnar. Celebrate your friends and family in this new year.
