Wine-Refermented Helles?! WHAT?! OH, HELL-ES YEAH!

We’ve been waiting on the right time to whip something up with our local pals @pleburbanwinery, and the time is nigh! “Seeker of the Serpent’s Eye” is a Helles refermented with fresh Seyval Blanc Grape Must, grown and harvested in high elevation, from just over the Western ridge of the Continental Divide…right here in NC! We chose Seyval Blanc for the Champagne-like characteristics, and we think you’ll be pleasantly surprised with the outcome!

We started with a base of Extra Pale Pilsner from @riverbendmalt, judiciously hopped with Tettnang and Hallertauer Mittelfruh in the Kettle and Whirlpool. We fermented it with our House Lager yeast, spunded it for 100% natural carbonation, and then began the Lagering process in our Horizontal Tanks. A few weeks later, the grapes were ready for harvest and Pleb was wonderful in selecting and pressing the grapes! We then pasteurized the must in our Pilot kettle, cooled it through our Heat Exchanger, and injected it into the tank! A secondary fermentation kicked off and we then spunded again for increased natural carbonation. The results are CRAZY good!

A classic Helles nose, laden with biscuity, grassy and herbal tones, and just a hint of grape skins peeking through. The body is smooth, yet crisp, with a really fun zip at the end due to the secondary fermentation and acidity of the must. The Seyval Blanc shines bright and bold in the finish, yet somehow in perfect harmony with the Malt.

This is what happens when the Champagne of Beers and actual Champagne have a baby.
