OOOOOHHH WEEEEE! “ALLIGATOR STEEZ” is here to par-tayyyy!
A little over a year ago, we went down to Tampa Bay to brew with the buds Tampa Bay Brewing Company, where we whipped up “Psycho Swamp Safari”, an absolutely killer WCIPA. We miss that beer, and really wanted it again, so we took the exact same recipe from a year ago, scaled it to our system, added a few small tweaks, and made it again here in Asheville!
Mashed with Riverbend Malt 2-Row and Munich malts, along with a dash of Proximity Malt Wheat. Hopped in the kettle with Columbus, and then hopped hot in the fermenter with Centennial Incognito on the first knockout, and hit hard in the second whirlpool with Michigan Cascade. Fermented nice and clean, and spunded for natural carbonation. Dry hopped only once, but aggressively, with more Michigan Cascade, Michigan Centennial, Strata, and a dash of Citra Cryo.
A bit more malty than our “Hustle” series, but in an incredibly balanced way. The ultra classic combo of Cascade, Columbus, and Centennial brings a dank-citrus-sappy character that’s rounded out nicely by the super bright and creamy Strata profile, and the Citra Cryo ties a nice lil’ fruity bow right on top. Extra crushable, extra bitter, extra fun. Hell yeah, dawgs!
We love the increased malt expression thanks to a higher percentage of Munich than what we’re used to, and hope y’all enjoy this new iteration of WCIPA as we start to stray away from “The Hustle is…” series and explore the style of WCIPA and American IPA a bit more. We’re stoked to start our exploration with the TBBC crew, and even more jazzed to bring this beer back with a DSSOLVR twist. Cheers, y’all!
