HUZZAHHHH! THE RETURN OF THE MEXICAN-STYLE LAGER WITH LIME!
“Ceni Cero Lime” was brought to life in collaboration with our PERMA-HOMIES @bierhallbrewing! We’ve known Chris for years, and in fact, he was the first collab we ever brewed as DSSOLVR while he was brewing up in Virginia (kisses to @ardentcraftales). So last year, we hosted them in AVL to whip up a Corn Lager with Lime, and we loved it so much that it absolutely had to make a return! We slightly overhauled it to make it a bit more clean/crushable, too!
Mashed with 100% @riverbendmalt comprised of Cumberland Pilsner, Hickory King Corn, and just a KISSSSS of Chit Malt. Gently kissed in the Whirlpool with Huell Melon, along with a very hefty amount of freshly zested and juiced Limes and a gentle dusting of Sea Salt. Fermented low and slow with our House Lager yeast, spunded for dat natty carb, and laid down to rest for a couple-a Moons in a Horizontal Lager Tank.
We experience freshly toasted loaves of white bread, a few whisps of Lime pith, hints of salinity, maybe a bit of Cantaloupe rind, and of course, a beautiful minerality and bright finish.
